 Peperonata is an easy-to-make Classic Italian fragrant dish made from bell peppers, tomatoes, onions, garlic, and Italian seasonings. Besides,  it is an aromatic vegetable stew served both warm and cold. Not only can it be presented as an appetizer but also as a sauce and side dish. Try Peperonata, a traditional Italian stew- it’s scrumptious!

 

Preparation

  1. Heat the olive oil in a large saucepan over medium heat, and add the onions. 
  2. Season the onions with salt and fry them for about 1-2 minutes, occasionally stirring, until they become soft.
  3. Add sliced bell peppers to the pan and mix thoroughly with onions. 
  4. Add chopped tomatoes, sliced garlic, Tomato Passata, seasonings, and vinegar, and mix everything well.
  5. Simmer vegetables under a closed lid with occasional stirring until peppers become soft.
  6. Turn off the heat, and garnish the vegetable sauté with black pepper and olive oil.
  7. Squeeze in lemon juice before serving.

Tips

  • Consistency: Depending on personal preference, Peperonata can be prepared with different consistencies. If you prefer a chunky texture, simmer for a shorter time. For a softer, stew-like thickness, continue cooking until the peppers break down further.
  • Adjust seasoning: Taste the Peperonata and adjust the seasoning as needed. Add more salt, pepper, or herbs according to your taste.
