Ingredients Soft Lemon Cookies

Preparation

  1. Melt butter on a stove over low heat.  
  2. Combine vanilla extract, egg, lemon juice, and lemon zest in a bowl.
  3. Add the remaining ingredients and knead the tough dough. 
  4. Roll the dough into a ball, cover it with a napkin, and refrigerate it for one hour
  5. Reheat the oven to 350 degrees.
  6.  Roll out the dough to a thickness of about 1/2 cm. 
  7. Cut out small figures: circles with a diameter of 3–4 cm, crescents, diamonds, etc., and place them on the baking sheet. 
  8. Place the cookies in the oven on the lower third of the oven
  9.  for 12–15 minutes for baking

Tips

  1. Choose Your Lemon Wisely: For the best flavor, use fresh lemons rather than bottled lemon juice. The zest of the lemon, where a lot of the essential oils reside, adds a vibrant taste that bottled juice can’t match.
  2. Zest Correctly: When zesting the lemon, make sure to zest only the yellow part of the peel, avoiding the white pith beneath, which is bitter. A microplane grater is ideal for getting fine zest without the pith.
  3. Underbeat Rather Than Overbeat: When you add flour to your cookie batter, mix just until the ingredients are combined. Over-mixing once the flour is added can develop the gluten and make your cookies tough rather than soft.
  4. Chill the Dough: Chilling the dough for at least an hour (or even overnight) not only makes it easier to handle but also helps intensify the flavors and prevents the cookies from spreading too much when baked.
  1. Don’t Overbake: Soft cookies come from careful timing. Bake them until they are just set and barely starting to brown around the edges. They will continue to cook slightly from residual heat after you remove them from the oven.
  2. Store Properly: Keep cookies with lemon in an airtight container to maintain their soft texture. If they start to harden, adding a slice of bread to the container can help keep them smooth.
