Preparation

  1. Rinse the shrimp under cold water and pat them dry with paper towels.
  2. Crack the eggs into a bowl and beat them with a fork or whisk until foam appears.
  3. Season the eggs with a pinch of salt and the ground white pepper. Mix well.
  4. Place a wok or large skillet over medium-high heat and add the vegetable oil. Swirl the oil to coat the pan evenly.
  5. Add the shrimp to the pan once the oil is hot and shimmering. Stir-fry the shrimp for about 2-3 minutes until they turn pink. Remove the shrimp from the pan and set aside.
  6. In the same pan, add a little more oil if needed. Pour the beaten eggs into the pan and let them cook undisturbed for a few seconds until they start to set around the edges.
  7. Using a spatula, gently push the edges of the eggs towards the center of the pan, allowing the uncooked eggs to flow to the edges. Continue doing this until the eggs are mostly cooked but still slightly runny.
  8. Return the cooked shrimp to the pan with the partially cooked eggs. Continue to stir-fry everything together for another minute, allowing the flavors to combine.
  9. Drizzle the sesame oil over the shrimp and egg mixture.
  10. Sprinkle with the white pepper, paprika or finely minced  green onions.
  11. Serve the dish hot with hot rice.

Tips

  •  Flavors: Add finely chopped garlic and ginger. These will add a rich flavor to your stir-fry. Also, if you prefer more flavorful shrimp, you can marinate them briefly. Toss the shrimp with soy sauce, vinegar, or rice wine. Let the shrimp sit for about 15-20 minutes before cooking.
  • Stir-Fry in Batches: It’s essential to leave the pan manageable. When adding shrimp, do it in batches so they can cook quickly and evenly without stewing, as this helps maintain the desired texture.
  • Wipe the Wok/Pan: If there’s excess moisture or residue in the wok/pan after cooking the shrimp, wipe it clean with a paper towel before proceeding.
